Fried rice basics
The basics of fried rice is that is cooked in a frying pan or stir fried in a wok and other ingredients are added to it. That means there’s no end to the range of fried rice recipe ideas. Eggs, seafood, vegetables or meat are some of the common additions to the basic easy fried rice dish.
Egg fried rice is often seen in Chinese dishes. In fact, different parts of China use different types of rice and what they mix in them. Then there’s chahan, a Japanese dish that comes from Chinese fried rice while Korean bokkeum-bap isn’t. Other dishes based on fried rice recipes include nasi goreng from Indonesia Malaysia and Singapore and khao phat from Thailand.

Health benefits of fried rice
As well as being tasty and very adaptable, there are even some health benefits from fried rice – another great reason to enjoy it. Rice contains Vitamin A and C, iron, phosphorus, calcium and provides energy through carbohydrates. It has antioxidant properties to help with those pesky free radicals and is good if you are working to increase muscle mass.
Chicken fried rice recipe
In this recipe, we made chicken fried rice or technically, chicken egg fried rice as there’s both chicken and eggs in it. Robert tells me you could easily swap out the chicken for another meat such as chorizo or ham or for seafood such as prawns. And there’s nothing to stop you adding or removing other vegetables to the mix depending on what you like (or have lying around – these are great use-up recipes).

- Fry chicken in frying pan until cooked
- Wipe pan and add whisked egg and fry. Remove from pan, chop up and put to one side.
- Add olive oil to pan fry onion then add garlic, peppers, mushrooms and rice until cooked (sticks a little) - if it sticks too much, add a knob of butter
- Add paprika and soy, salt and pepper
- Add chicken and egg into pan, stir to combine then serve.
- Garnish with spring onions and serve with prawn crackers
