Strawberry and Banana Granola Parfaits
One of the biggest challenges in our house is to find something a little different for breakfast. There’s cereal, toast, there are treats like chocolate croissants and pancakes. But sometimes, it can get a bit boring and we aren’t the best at preparing ahead.

But these strawberry and banana granola parfaits are a perfect example of something that would make a tasty breakfast. Or even a great mid-morning snack. Combining the goodness of fruit with homemade granola, they are also ideal to help you get through to your next meal with plenty of energy.
What is granola?
Granola seems to be everywhere in the shops and that’s a sign that something is popular and potentially healthy. Perhaps the only downside is that store-bought ones can often have a bit much of the sugar content to be ideal.
The great thing about homemade granola is that you can put almost anything in it. Have a sweet tooth? Then use honey, maple syrup, brown sugar or a mixture. Like certain nuts but not others as much? Then use what you like or what you have. The same applies to any seeds or dried fruit you add.
In this recipe, we have used a mixture including dates, almond butter and sunflower seeds. But really, you can mix in whatever you want. The idea is just to get a crunchy layer to fit with the fruit and yoghurt. So have fun!

Why use Greek yoghurt?
Like the granola mix, you can use any type of yoghurt into the recipe to suit what you like or what you have in the house. But if you are thinking about the health benefits of your breakfast, then Greek yoghurt definitely makes a strong case.
For starters, yoghurt, in general, provides more protein than milk which the body uses for bones, muscles, healthy skin and blood. Greek yoghurt also comes with a good dose of probiotics to help with the digestive system. And calcium is a well-known benefit of yoghurt – Greek yoghurt can have around 18% of the RDA in a single serving.
Greek yoghurt also contains Vitamin B12, potassium and other nutrients. It is helpful to make you feel full and avoid mid-meal snacks which is why it is popular for breakfast. What you need
- 6 large dates (pitted)
- 3 tbsp almond butter
- 3 tbsp honey
- 2 tbsp coconut oil (melted)
- 1 tsp vanilla extract
- 1 cup rolled oats
- ½ tsp ground cinnamon
- ¼ tsp salt
- ¼ cup raw almonds (chopped)
- 2 tbsp sunflower seeds
- 2 cups Greek yoghurt (plain)
- 2 large bananas (sliced)
- 1 cup strawberries (sliced)
How to make Strawberry Banana Granola Parfaits
Heat the oven to 350F/190C and add some baking paper (greaseproof paper) to an 8-inch square baking tray.
Into a blender or food processor, add the dates, almond butter, honey and coconut oil as well as the vanilla extract and blend until creamy and smooth.

Take a large mixing bowl and add the oats, cinnamon, salt, almonds and sunflower seeds then mix. Add the date mixture and combine.

Add the granola to the baking tray and pat down into an even layer. Pop into the oven until toasted and golden brown, usually around 20 minutes.

Remove and leave to cool. It will crumble as you remove it and that’s okay.
Take your bowl, mason jar or glass and alternate layers of Greek yoghurt, granola, sliced bananas and fresh strawberries then enjoy!
