4-Ingredient Strawberry Caprese Skewers

Can you use different berries?

Strawberries aren’t the only fruit that may be used in this dish; however, they are a delicious alternative. Blackberries and their sweet/tart flavour profile make a fantastic alternative to strawberries.

Raspberries are another option. Their natural sweetness would be the ideal foil for the cheese and balsamic glaze, and they’re delicious when paired with blueberries or strawberries. You might also combine blackberries and raspberries on the same skewer.

Can you make a savoury version?

If you prefer, this dish may be served as a side. Simply replace the 16 strawberries in this recipe with 8 red and 8 yellow/orange grape tomatoes to make it a savoury skewer dish to serve your guests.

What you need to make strawberry Caprese skewers

  • 16 fresh strawberries, washed and cut in half across the width, hull intact
  • 32 medium fresh basil leaves, washed and patted dry
  • 16 Ciliegine (mini-Mozzarella balls)
  • 1 c. balsamic vinegar

Optional:

  • 2 T. high-quality extra-virgin olive oil to drizzle

How to make the recipe

Take a strawberry and, using the hull side facing up, thread it onto a wooden skewer. Then fold one basil leaf in half, dark side out, and add it to the skewer. Add one tiny-Mozzarella ball after another followed by another folded basil leaf before finishing with the bottom half of the strawberry.

Prepare the remaining strawberries, basil, and Mozzarella as directed in Step #1. Place on a serving plate and serve.

To make the glaze, warm balsamic vinegar in a small sauté pan over medium-high heat. Stir frequently until the liquid is reduced to about a third of its original volume.

Remove the glaze from heat and allow it to cool slightly. If desired, drizzle with extra virgin olive oil while still warm. Serve right away.

Storing the recipe

The reduction can be kept for up to a week in an airtight container at room temperature.

Recipe tips

When the warm balsamic glaze comes into direct contact with the cheese, it will begin to melt. To keep things tidy, don’t drizzle the glaze over the cheese when pouring it on the skewers. 

Other mild cheeses, such as young brie, camembert, and hard cheese varieties, can be used in place of mozzarella. As a consequence, you should choose milder varieties of cheese to balance the strong tastes of the rich balsamic glaze and the sweet strawberries.

Ingredients

Instructions

Thread the top half of one strawberry onto a wooden skewer with the hull facing up. Next, fold one basil leaf in half, dark side facing out, and add it to the skewer. Add one mini-Mozzarella ball, followed by another folded basil leaf, and the bottom half of the strawberry.

Repeat Step #1 with the remaining strawberries, basil, and Mozzarella until you have 16 completed skewers. Arrange on a serving platter and set aside.

To prepare the glaze, add balsamic vinegar to a small sauté pan over medium-high heat. Cook, stirring frequently, until the vinegar is reduced to about 1/3 of its original volume.

Remove glaze from heat and let cool slightly.  Drizzle over the skewers, along with some extra virgin olive oil, if desired. Serve immediately.
