Grilled Summer Vegetable Medley with Herb Butter
When the weather is warm, sometimes you want something that is tasty and simple. Maybe it is to go with a meat dish or maybe just for a meal on its own. This grilled summer vegetable medley is just the solution and because it uses herb butter, you can easily change the flavour to suit what you love.

What is flavoured butter?
Flavoured butter is also known as compound butter, a fancy way of saying that you take normal butter and add other ingredients. Garlic butter is one of the most well-known examples and you can often buy pre-made versions in the shops.
There’s loads of things you can add to butter to give it extra flavour. Herbs and spices are common, but people even add sweeter ingredients like peanut butter or berries. There are even seasonal flavours like a pumpkin butter recipe!

With this recipe, you are using a pretty simple combination of fresh thyme and a little salt or Himalayan salt if you like. You can easily swap the thyme for another herb to give it a different flavour. So if you were serving the vegetables with lamb, maybe try rosemary instead? Or oregano or basil to go with chicken? The basil recipe is yours to adjust as you like!
No grill (or no grill weather?)
Now I know at this time of the year, firing up the grill isn’t always possible. As I’m writing, we had sunny skies yesterday and torrential rain today – UK weather at its finest. But there is another way to ‘grill’ food without the need for a barbeque.
Griddle pans come in two types – flat and with ridges. The latter is ideal to create the look and feel of a grill without needing to be outside. Griddle pans with ridges let any excess liquid or fat leak away from the food and stay in the pan while also creating those lines on the food that are so classic BBQ style.
We have one that is similar to this Lodge Square Cast Iron Grill Pan. It has good depth to the ridges to remove the fat from foods and the cast iron material means you can cook at a good heat. This kind of pan is great to have in the kitchen when the weather is against grilling outside.
Another option would be to use something like a George Foreman grill which lets you have something like a small barbecue in the house. These run on electric and can be popped on the kitchen bench to offer the grill style without the need to get outside if the weather isn’t great.
