If you choose to freeze fresh cauliflower regardless, we recommend that you rice the cauliflower first so as to avoid any strange textural changes.

  3. Remove the cauliflower rice from the heat and put it in a freezer bag or an airtight container. It’s a good idea to portion out the cauliflower rice before freezing it so that you can only take as much as you need at once. (It will keep for up to three months without being blanched.)
  4. Sauté thawed cauliflower rice in olive oil, and season with salt and pepper to taste.
