How to Tell a Pineapple Is Ripe

The easiest way to determine if a pineapple is ripe is to grab it by the stem and nudge it from the bottom. It’s ripe if it smells like juicy, sweet pineapple juice.

If it doesn’t have a distinct pineapple scent, it’s not ready to eat. It’s over-ripe if it smells fermenty.

A ripe pineapple should be fresh and firm, not soft; the leaves should be bright, not withered. The color of the tropical fruit is irrelevant: what matters is the fragrance.

Contrary to a widespread misconception, pineapples do not ripen after being picked. The pineapple flesh will get brighter golden and softer, but the sugars will not continue to develop after they’re harvested. Pineapples are typically picked when ripe and consumed as soon after purchase. If you need to keep them for a while, put them in the fridge; they’ll stay fresher for longer.

How to cut a pineapple step by step

Using a large chef’s knife, cut off the top of the pineapple.

Turn the pineapple upside down on a plate for 30 minutes to rest. Because pineapples are kept stem side up, gravity causes the fluids to flow downward. Placing the pineapple upside down for 30 minutes allows the juice to flow back down and distribute throughout more juicy pieces.

Remove the core of the pineapple. After 30 minutes, trim off the other end.

Remove the peel from the pineapple by cutting it away in a spiral pattern around the fruit.

Remove the peel and pith from one side of a pineapple half. Slice lengthwise into two halves.

Lay each pineapple half on the flat cut side and cut it in half lengthwise.

To remove the core, make an angle cut across it.

Slice each quarter in half lengthwise, then turn it and slice in the other direction to make pineapple chunks.

How to remove just the pineapple core

Method 1: Use a knife to cut the cleaned pineapple in half through the middle.

To make slices or diced pineapples, cut the pineapple crosswise into four pieces.

Remove the thick and fibrous core from the middle of each wedge.

Method 2: Cut Rings of Chunks

If you’re making rings, use the spiral cut technique to remove the eyes. This is most effective if you’ve already removed the eyes with the spiral cut method.

Remove the core from each apple with a round cookie cutter or biscuit cutter. A 1 1/2-inch round cutter was used for me.

Method 3: Cut into spears, slices, chunks, or tiny bite-size pieces from each quarter.

Remove the core from the pineapple and then cut it into pieces.

Serve on a bed of greens with sliced almonds and strawberries, or as part of a colorful fruit salad, pineapple salsa , popsicles, or smoothies.

How to cook pineapple – the basics

Here are some easy ways to prepare pineapple after it’s been sliced.

Grilling

  • Step 1 – On a stovetop or an outdoor grill, heat the pan to medium-high.
  • Step 2 – In a small mixing dish, combine the lime juice, oil, honey and spices with a fork or wire whisk.
  • Step 3 – Thread the pineapple chunks onto metal skewers, then apply the spice mixture to them.
  • Step 4 – Place each slice or skewer on the grill, with the seasoned side facing the fire, and cook for 4 to 5 minutes. Turn and grill for another 5 minutes on the other side.

Broiling

  • Step 1 – Cover a baking sheet with aluminum foil or oil it to coat. Arrange the pineapple chunks or slices on the pan.
  • Step 2: Place the pan on an oven rack about 2 inches from the flame and turn on the broiler.
  • Step 3 – Remove the pineapple from the oven and turn it after about 1 minute.
  • Step 4 – Brush each skewer or pineapple slice with lime juice and season to taste with the spices of your choice.

Boiling

  • Step 1 – Fill a pot halfway with fresh pineapple chunks and water.
  • Step 2 – Bring the water to a boil, then simmer the pineapple for 3 minutes to destroy the enzyme that keeps gelatin from setting.
  • Step 3 – Allow to drain and cool before using in a gelatin mixture.

How to Grill Pineapple on a Stove

Grilled pineapple makes a delicious side dish for meat dishes like grilled pork or beef, as well as an attractive dessert with chocolate, ice cream, or mascarpone cheese. It’s also high in vitamin C.

A half-cup serving of sliced pineapple contains 20% of your daily required vitamin C, according to MayoClinic.com. If you don’t have a grill or the weather is uncooperative, you may get similar effects on the stovetop by placing your sliced pineapple on a hot burner.

  • Step 1 – In a small bowl, whisk together balsamic vinegar, butter, and brown sugar.
  • Step 2 – Heat the grill pan lightly on the stove over medium heat. When the pan is hot, add the pineapple rings.
  • Step 3 – After lightly dipping each pineapple ring in the butter-balsamic mixture, carefully add it to the hot pan. Continue layering pineapple until the pan is full — the pineapple should not be packed too tightly in the pan, so you may need to cook it in batches.
  • Step 4 – Cook the pineapple without flipping it or moving it in the pan until it’s lightly browned and has grill marks on it, about 3 minutes. Carefully flip the pineapple over, mist it with some of the remaining balsamic-butter mixture, and continue to cook for another 3 minutes on each side.
  • Step 5 – Remove the cooked pineapple from the hot pan and place it on a serving platter or plates. Brush lightly with the remaining balsamic-butter mixture before serving.

Tips

To prepare a pineapple for canning, stand it upright on a cutting board. Using a sharp knife, carefully cut down the peel to remove any remaining brown eyes and discard them. Slice it across into rings to make it easier to eat.

You may play around with the marinade to make it more or less spicy. Replace the brown sugar with honey, molasses or golden syrup; replace the balsamic vinegar with lemon juice, rum or lime juice; add cinnamon, cloves, five-spice powder or cocoa powder to the marinade.

If desired, sprinkle the cooked pineapple with fresh chopped mint, basil, or toasted hazelnuts before serving.

If you don’t have a grill pan, use a skillet or cast-iron skillet instead. Though the pineapple will not have the rich brown tones of a grill pan, it will taste similar to that cooked in one.

How to prepare a pineapple

The best ways to prepare a pineapple are boiling, grilling, broiling and baking. The most popular way is grilling because it produces the sweet caramelized flavour of cooked sugar without much work. You can also boil or bake them for an alternative cooking method that retains more nutrients than when you grill or broil them respectively.
