Instant Pot Steel Cut Oats Breakfast Bowl

I’m not bad as a morning person (my Mum is terrible) but I’m not always the keenest to be cooking at breakfast time.  That’s why things like cereal tend to be a go-to breakfast idea!  But with this recipe, I liked the idea of setting it and almost forgetting it until it was time to serve a warm and healthy breakfast.  Let’s check out how to make steel cut oats for a breakfast bowl in your Instant Pot.

What are steel cut oats?

You’ll notice the recipe calls for steel cut oats – but what is that and how is it different to other types of oats?  All types of oats start out in the same place – unbroken grains called oat groats.  It is how they are processed that creates the different variations.

How much processing they receive is what creates the different products.  It also gives them a different texture and means they need cooking in specific ways.

  • Steel cut oats – the whole oat groats is cut into pieces, so it looks a bit like rice.  It takes the longest to cook and has a more substantial texture
  • Rolled oats – the oat is pressed to make a flat disc.  They cook quicker and absorb more liquid but also keep their shape
  • Instant oats – most processed of the three, they are pre-cooked, dried and rolled even thinner so they cook the quickest but are mostly likely to go to mush

You definitely want to use the type of oat stated in the recipe to get the desired result.  But the good news is that all of them bring the same health benefits – the choice is just about cooking time, texture and preference.

Why are oats great for breakfast

There are a few reasons why everyone seems to love oats for breakfast.  For starters, they contain a lot of dietary fibre which is important to keep the digestive system working smoothly.  There’s also something called Beta-Glucan that is good to help lower blood sugar levels and makes us feel full for longer – so we can resist that mid-morning snack urge!

All types of oat also contain plant compounds called polyphenols that help to lower blood pressure and promotes good blood flow.  Plus, they are anti-inflammatory and can even help calm itching on the skin.

Total Time 35 minutes

Ingredients

  • Non-stick cooking spray
  • 1 c. steel cut oats
  • 3¼ c. water
  • 2 c. Greek or coconut yogurt
  • 1½ T. chia seeds
  • 1 T. real maple syrup, plus additional for serving
  • 1 c. fresh strawberries, hulled and cut into chunks
  • 1 c. fresh blueberries, rinsed and patted dry

Instructions

Spray the inside of the Instant Pot with a non-stick cooking spray.

Add the oats and water then mix. Cover with the lid and lock then set the pressure valve to ‘sealing’.

Press the ‘manual’ button and select high heat. Set the cooking time for 10 minutes and let the Instant Pot build up pressure.

While the oats cook, mix the yoghurt, chia seeds and maple syrup in a small glass bowl.

When the cook time is complete, turn off the Instant Pot to prevent scorching. Allow a natural release of pressure for 15 minutes then quick release the rest of the way.

Carefully remove the lid and stir. Transfer to serving bowls and add the yoghurt mixture on one half.

On the other half add the fruit and drizzle with a little extra maple syrup.

Notes

To save time on a morning, prepare the yoghurt mix the night before and keep it in the fridge
