Sous Vide Bacon and Gruyere Egg Bites

There’s nothing new about the concept of sous vide (pronounced ‘sue veed’ if you wondered like me) – ask a professional chef and they will tell you that it has been a recognised system for years.  But as the ideas and technology in use become more popular and easier to get, more of us can have a go.

What is sous vide?

Sous vide is a cooking approach that aims to have the perfect doneness in any food while reducing the stress and work involved.  With a traditional cooking method, there’s the heat that comes from the cooker to the pan then into the food.  Or the heat comes from the oven elements and cooks the food in a baking tray or dish.

But the problem is that the oven or the pan is often hotter than we need it to be.  So, there’s the risk of overcooking the food or taking it off too early and undercooking it.  With sous-vide, you cook in water using a water bath and a special temperature gadget. This makes it easier to raise the temperature or keep it steady.

That might sound a bit complicated but with the right equipment, it is a lot simpler than you think.  And the results are much more consistent.

What you need

  • 6 large eggs ½ cups + 2 tbsp smoked gruyere cheese,
  • grated or finely chopped,
  • divided ¼ cup cottage cheese (cream cheese)
  • 4 slices bacon, cooked crispy and crumbled,
  • divided 2 tbsp green onion, sliced (green part only)
  • 6 4-oz. glass canning jars
  • Salt and black pepper, to taste

How to make Sous Vide Bacon Gruyere Egg Bites

  1. Fill a large container or sous vide container with water and attach the sous vide circulator to the side. Set the temperature to 172°F / 77°C and the cooking time to 30 minutes
  2. While the water warms up, add the eggs, half a cup of Gruyere cheese and the cottage cheese to a blender. Season as desired and blend until smooth
  3. Grease 6 4 ounce canning jars and divide ¾ of the bacon into the jars. Top off with the blended egg mixture Add a two part lid to each jar and close until finger tight – this stops the water from getting inside but still allows a little air to circulate while cooking. Shake each jar to distribute the mixture with the bacon
  4. When the water reaches temperature, place the jars into it using tongs and reset the timer for 30 minutes
  5. When the cooking time is finished, remove the jars and carefully loosen the lids. Top with the rest of the cheese, bacon and green onions and leave to cool

Recipe notes

This recipe is a Starbucks inspired recipe that uses sous vide cooking.  You can serve them in the jars they come in or you can put them on a plate if you want to have a more elegant looking dish.

Notes

Remember to grease the jars with a non-stick cooking spray, use melted butter or another means to grease them before adding the ingredients, so they come out easily once they are completely set

You can store the egg bites in the fridge and reheat with the microwave or a bowl of warm water for 15 minutes before you serve
