How Long Does Pickled Cabbage Last?

The ratio of vinegar and water in a pickling brine is critical, especially when canning. People most often use a 50:50 ratio of vinegar to water while cooking. Because this dish requires less preparation time, the vinegar proportion is reduced. This recipe may be kept in the fridge for approximately a week in an airtight container.

This may vary if you use different pickling liquid options like white vinegar or apple cider vinegar as part of the pickling process.

Simple Pickled Cabbage Recipe

What you’ll need:

  • ½ small head red cabbage, thinly sliced
  • 1 tbsp. root ginger, sliced
  • ½ tsp. mustard seeds
  • 1 clove garlic, peeled
  • 1 cup (240ml) rice wine vinegar
  • ½ tbsp. coconut sugar
  • ½ tbsp. salt 

What to do

Place the sliced cabbage, ginger, mustard seeds and garlic in a glass jar. 

Pour the vinegar into a small pot with the sugar and salt and bring to a boil. 

Now pour the warm vinegar into the jar with the cabbage and set aside to cool for 10 minutes. Cover the jar with a lid and store in the refrigerator for up to 2 weeks.

How long will it keep?

Pickled cabbage will keep for three weeks if kept in a sealed container in the refrigerator. (I wouldn’t recommend freezing it.)
