Simple Recipes That Will Make Easter Brunch Fun
Easter means different things to different people. For some, it might mean a trip to church. For others, it is a holiday to relax and enjoy themselves. Whatever the case, not every meal at Easter needs to be a big, heavy roast lunch. In fact, Easter brunch is a great idea and there are lots of ideas what you can serve.

Omelettes and egg dishes
Robert makes a meal omelette and the beauty of these is that you can use lots of stuff that is in the fridge to add flavour to it. He had one the other day that used up some mushrooms along with cheese and eggs. Looked a bit weird but he enjoyed it.
Baked Brunch Omelette
Another recipe I saw on All Recipes used white bread cut into cubes in the bottom of a baking tray. Then you need 1.5 pounds of cheddar cheese, 1 cup of cubed ham, 8 eggs and 2 cups of milk.
Half the ham goes in then half the cheese and repeat. Beat the eggs with milk, a little salt and a dash of hot pepper sauce (if you like) as well as ¼ cup of chopped green (spring) onions.
Pour the egg mixture over the ham and cheese. Put the tray on a baking sheet with a rim and put in in the oven then add water to the baking sheet. Cook for around 60 minutes or until the eggs have set.

Crescents stuff with egg
I instantly thought ‘croissants’ when I saw this recipe until you see what is hiding inside! Rachel from Cakies by Rachel uses crescent dough and fills them Parma Ham, basil, sun-dried tomatoes and hardboiled eggs as well as a little cheese and Parmesan. She then rolls them up and the result when cooked is a hidden surprise when you cut into the pastry.
Cheddar and Sausage Quiche
This quiche recipe from The Gifted Gabber would do for brunch at any time but Easter is a good reason to give it a try. The filling includes a favourite pork sausage, onions, peppers, garlic and strong cheddar with whipping cream and herbs. Easy to make, the recipe will create a 9-inch quiche for the family.
Breads and baked treats
There are loads of great bread recipes from around the world that use different ingredients to add flavour to them. Some are even traditional Easter dishes.
German Roseinenbrot (Raisin bread)
This is a traditional German recipe that is enjoyed at Easter and comes from Earth Food & Fire. It adds a cup of raisins to the usual style of bread recipe and is topped with a mixture of egg yolk, milk and sliced almonds.
Pumpkin Pie Pancakes with Spiced Whipped Cream
This is a recipe that would do just as well around Halloween as for Easter. It uses fluffy pancakes with pumpkin and a few spices such as ginger, cloves and cinnamon. Savor With Jennifer also recommends taking some whipping cream and a little powdered sugar then adding cinnamon, nutmeg and vanilla for the perfect topping.
Italian Easter Pie
I love this dish when you read the words ‘pizza dough’ in the recipe! This family favourite from Pinch Me I’m Eating includes two types of salami, pepperoni, mozzarella, ricotta and eggs, making it sound like a pizza. But it really does look the part of a pie and you can even get decorative with the pastry on the top.
Something sweet
Just because it is brunch, doesn’t mean you can’t enjoy a little something sweet with your meal.
Vatrushka Buns
Vatrushka Buns are a traditional Russian and Eastern European sweet pastry made into a ring and filled with cottage cheese and either berries or raisins. You can even use apple sauce, cranberry sauce or a favourite jam to add the sweet flavour to the dish, according to Happy Kitchen Rocks.
Breakfast Crème Brulee
Mention Crème Brulee and I’m interested so the idea of including it for Easter brunch was worth checking out. Champagne Tastes recipe uses egg yolks, milk (or coconut milk) and a little vanilla and lemon. It is a sweet treat with sugar and coconut and you can top it with your favourite berries.
Something lighter
Sometimes you might want something a little lighter and here are some ideas.
Granola Cups with Banana Cream
This recipe will make around 9 little granola cups and uses a little coconut oil and raw honey to bind the banana, flax meal, shredded oats, pecans and almonds together. The banana cream in this recipe from Tasting Page sounds very tasty and uses cashew nuts, vanilla, cinnamon, honey and water with the bananas to top the little cups.
Mixed Greens Salad with Fruit
This salad from Family Food on the Table would work equally well as a main Easter brunch dish or as a side salad to something else. The salad uses mixed greens, blackberries, strawberries, mandarin oranges and chopped pecans as well as crumbled goats cheese. The salad is then topped with a honey lime vinaigrette.
